This brewery incubator, tasting room & restaurant is located a former warehouse building once operated by Pabst Brewery. It is located directly across from Pabst Brewing Co. Bottling Department, a landmark building of the brewery legend in Milwaukee, WI.

The first phase of the program was to reimagine and repurpose the more recent user’s brewery and restaurant into a modern organic space with rich tones, wood textures, millwork, bar facelift, lounge and repurposed tables/seating. The exterior aesthetic was changed with building colors, signage and logos. The rebranding was critical for Pilot Project to be welcomed into the Milwaukee beer scene. A future second phase will be expansion of the brewhouse production area.

In their own words, Pilot Project was launched as a collaborative and artistically curious space to help support talented brewers in an industry with exceptionally high barriers. Modeled after the music industry, Pilot serves as a launch pad for start-up breweries, offering assistance with recipe R&D, production scaling, marketing, distribution and more.

The MKE location is the second for Pilot Project’s growth with goals of more national and international distribution of their teams and collaborator’s amazing craft beers.
